Whisky.com reviews the Depaz Rhum XO 8 Years. For the designation XO (extra old), a rhum must have been matured for at least six years according to AOC (Appellation d'Origine Controlee) guidelines. This rhum was aged for eight to ten years in oak barrels and was then bottled at a stronger 45% vol.
Habitation Depaz looks back on 400 years of experience in rum production. The sugar cane is grown and processed exclusively on their own fields on the fertile soil at the foot of the Vukan Pelée. The freshly pressed sugar cane juice is distilled on traditional coffey stills, also called creole column stills. In order to receive the "controlled designation of origin" (AOC) seal, the rum must meet very high quality standards.
