I made this healthy miso glazed salmon bowl because every time I go literally anywhere I'm hit with another sports betting ad.
There's always some dude in a suit screaming about some can't miss parlay like I'm one push notification away from betting the house. So, instead of that... I made dinner.
This bowl is everything those ads aren't. Calm, flavourful, and actually good for you. Roasted salmon brushed with a sweet and savoury miso glaze, laid over a salad with rice noodles.
It's a fast, satisfying weeknight meal that comes together in 15 minutes.

Recipe

Miso dressing / Marinade

Note: this does double duty, so please separate it in two

1 tbsp miso paste
1 tbsp ponzu
1 tbsp rice win vinegar
1 tbsp honey or maple syrup
1 tbsp mayo

1. Mix all ingredients in a bowl until well combined.

Salmon

1 pc 8oz salmon fillet, skin on
4 tbsp miso marinade (from above)
1 tsp cooking oil (canola, avocado, etc)

1. Brush marinade over top of salmon
2. Place on a wire rack over a baking sheet
3. Spray with cooking oil
4. Broil under high heat for 5-7 minutes until charred and cooked through
5. Allow to cool for 1 minute before use.

To plate
1. Mix a salad with ingredients of your choice (the beauty of this is I encourage you to use whatever veg you have in your fridge) with 1 tbsp of the dressing.
2. Top with the miso salmon
3. Optional - add a drizzle of chili oil.
